Zucchini Fries


3 Large zucchini~ washed and patted dry.
1/4 cup of olive oil
variety of spices: tsp garlic powder, tsp onion powder, 1/2 tsp salt/pepper
tsp cumin, tsp oregano, chopped fresh rosemary (whatever your spice desires are)

preheat oven to 500 degrees.
take cookie sheet and rub thin coat of olive oil on surface.
In a bowl throw all of your favorite spices to combine.
take the zucchini and cut in half length wise. cut the flesh out where the seeds are. discard this flesh.
slice zucchini into shoe string style slivers. like french fries.
put zucchini in bowl with spices and gently toss without breaking shoe strings.
drizzle oil and toss to coat with spices and oil.
Lay zucchini on cookie sheet, in one layer.
bake in 500 degree temp oven for 15-18 minutes until crisp.
take out and eat like french fries.

Wish you would have posted this recipe at the beginning of the summer, before my zucchini patch exploded with zucchini. LOL I'll keep it for future reference.

you grew your own zucchini? How cool! I'll have to give it a try next year. This year we had tomatoes, cabbage, green peppers and strawberries. (didn't get to taste the strawberries at all because the critters got to them...arghhh). However the tomatoes were delicious. I think I'm into this gardening stuff now.

String some silver flash tape (twisted) above your strawberries. That will scare off the birds, but you'll have to just pick daily to prevent snails or squirrels getting to them. That worked for our blueberry bushes and grape arbor. However we decided to cover the red grapes with black netting. One year, just after we decided the red grapes were almost ripe, we awoke to an arbor full of empty vines. Overnight the crows picked every bunch clean. So we just had stems. We learned the hard way to cover with black net. I used that on strawberries sometimes too.

ZUCCHINI IS EASY TO GROW!! We just had 3 plants and have been overwhelmed with zucchini all summer.

Maybe I'll just stick to tomatoes and zuchinni next year.

We have apple and peach trees also...no apples this year, tons of peaches though but I don't know...they just didn't look right.

I made these tonight...they were delicious! They didn't come out crispy enough though...it could have been the oil I used...I didn't have olive oil at home.
